STRAWBERRY BLUEBERRY PANCAKES

  • 1.5 cups plain flour
  • 1 tablespoon sugar
  •  1 tablespoon baking powder
  • 1 pinch salt
  • 3 tablespoon butter
  • 1.25 cup milk
  • 2 teaspoons vanilla essence
  •  1 egg
  • 1 cup strawberries
  •  Whisk together the dry ingredients. (flour, baking powder, sugar, and salt)
  •   Melt the butter.
  •   Whisk together the wet ingredients (melted butter, egg, vanilla, milk)
  •   Add the wet ingredients to the dry ingredients, whisk them until well combined.
  •   Leave the batter to rest for 10 mins.
  •   Dice the strawberries and fold into the pancake batter.
  •   Heat a pan to medium heat, add a little butter or oil to the surface of the pan, then scoop     one-quarter cup of the batter and pour it onto the heated pan. Once bubbles appear on the surface of the pancake and burst, flip the pancake.
  • Decorate with strawberries and blueberries
