Breakfast during the school term can be such a hassle and as such we try to do the most basic yet nutritious meals for those busy mornings. It is easy to make a sandwich or Pap (Akamu) but on some days I feed my kids the following:

Puff-Puff!

And that is because it is not a crime to eat puff puff for breakfast. One of my fondest childhood memories is connected to puff-puff, my late grandmother would round us up (all the grand kids) and buy hot puff puffs for us from a vendor who passes by in the morning. We loved it and I carried that tradition on. Once in a while, I make puff puffs in the mornings and we enjoy it with a cup of hot chocolate – it is especially perfect on cold mornings. Moin-Moin!

Where do I get time to make Moin-Moin on a busy week morning you ask? I don’t! I make a huge batch on the weekend or the night before and we reheat in the morning. We pair moin-moin with oats, or bread (don’t knock it till you try it!), or eat alone. It is especially filling. Sometimes I also put it in the kids lunchbox, paring it with jollof rice. Cookies!

Yes. My kids get Cookies sometimes for breakfast, but not just any kind of cookie. They get the healthy stuff. On days when we are pressed for time, I send them off with a flask of tea and a couple of Oatmeal Cookies. The recipe is so easy and you can find it HERE
