INGREDIENTS
- 1.5 cups plain flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 pinch salt
- 3 tablespoon butter
- 1.25 cup milk
- 2 teaspoons vanilla essence
- 1 egg
- 1 cup strawberries
PREPARATION
- Whisk together the dry ingredients. (flour, baking powder, sugar, and salt)
- Melt the butter.
- Whisk together the wet ingredients (melted butter, egg, vanilla, milk)
- Add the wet ingredients to the dry ingredients, whisk them until well combined.
- Leave the batter to rest for 10 mins.
- Dice the strawberries and fold into the pancake batter.
- Heat a pan to medium heat, add a little butter or oil to the surface of the pan, then scoop one-quarter cup of the batter and pour it onto the heated pan. Once bubbles appear on the surface of the pancake and burst, flip the pancake.
- Decorate with strawberries and blueberries
