Nigerian Scotch eggs are a delicious snack made with hard-boiled eggs wrapped in seasoned sausage meat, coated in breadcrumbs, and deep-fried to perfection. Here’s a simple recipe you can try at home:

Ingredients

  • 6 large eggs (for boiling)
  • 1 raw egg (for coating)
  • 500g sausage meat (or ground beef/chicken)
  • 1 small onion, finely chopped
  • 1-2 fresh chilies, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon ground nutmeg
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour (for coating)
  • 1 cup breadcrumbs (for coating)
  • Vegetable oil (for frying)

Instructions

  1. Boil the Eggs:
    • Place the 6 large eggs in a pot, cover with water, and bring to a boil. Once boiling, reduce the heat and let simmer for 6-8 minutes for hard-boiled eggs.
    • Transfer the eggs to a bowl of cold water to cool, then peel and set aside.
  2. Prepare the Sausage Mixture:
    • In a mixing bowl, combine the sausage meat with the chopped onion, chilies (if using), minced garlic, nutmeg, thyme, curry powder, salt, and pepper. Mix thoroughly to ensure all ingredients are well incorporated.
  3. Coat the Eggs:
    • Divide the sausage mixture into 6 equal portions.
    • Take one portion and flatten it in the palm of your hand.
    • Place a boiled egg in the center and carefully wrap the sausage meat around the egg, ensuring it is evenly covered. Repeat with the remaining eggs.
  4. Prepare for Frying:
    • Beat the raw egg in a small bowl.
    • Roll each sausage-wrapped egg in flour, dip in the beaten egg, and then coat with breadcrumbs. Ensure they are well-coated for a crispy texture.
  5. Fry the Scotch Eggs:
    • Heat the vegetable oil in a deep frying pan or pot over medium heat. The oil should be deep enough to fully submerge the Scotch eggs.
    • Carefully place the Scotch eggs into the hot oil and fry until golden brown and crispy, about 5-7 minutes. Turn occasionally to ensure even cooking.
  6. Drain and Serve:
