Easiest Carrot Cake Recipe

This is one if the easiest carrot cake recipes you can try and it is awesome because:

  • it all happens in a blender
  • not a lot of ingredients
  • carrots don’t put the kids off

Ingredients

  • 1 Cup Coconut Oil
  • 4 Carrots (peeled and Chopped)
  • 4 Eggs
  • 2 Cups All Purpose Flour
  • 1 Teaspoon Bicarbonate of Soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla Essence
  • 2 Cups Sugar

Preparation

  • Preheat oven to 160 degrees
  • Transfer chopped carrots, eggs, oil, sugar, vanilla essence into a blender and blend on low speed, increasing as it continues to blend.
  • Add flour, Baking powder, baking soda and continue blending till smooth paste is achieved.
  • Transfer batter to a baking pan and to the oven for 50 – 60 minutes or until you stick a toothpick in and it comes out dry.
