This is one if the easiest carrot cake recipes you can try and it is awesome because:
- it all happens in a blender
- not a lot of ingredients
- carrots don’t put the kids off
Ingredients
- 1 Cup Coconut Oil
- 4 Carrots (peeled and Chopped)
- 4 Eggs
- 2 Cups All Purpose Flour
- 1 Teaspoon Bicarbonate of Soda
- 1 Teaspoon Baking Powder
- 1 Teaspoon Vanilla Essence
- 2 Cups Sugar
Preparation
- Preheat oven to 160 degrees
- Transfer chopped carrots, eggs, oil, sugar, vanilla essence into a blender and blend on low speed, increasing as it continues to blend.
- Add flour, Baking powder, baking soda and continue blending till smooth paste is achieved.
- Transfer batter to a baking pan and to the oven for 50 – 60 minutes or until you stick a toothpick in and it comes out dry.
