Ingredients
Wet Ingredients:
- 1 egg
- ½ cup milk (130g/126ml)
- 3 Tbsp sugar (30g/45ml)
Dry Ingredients:
- 1 cup white rice flour (150g/222ml)
- 2 tsp baking powder
Instructions
- Whisk wet ingredients: In a mixing bowl, whisk together the egg, soy milk, and sugar until smooth.
- Add dry ingredients: Add the rice flour and baking powder, then mix until you get a smooth batter.
- Cook on low heat: Heat a griddle or frying pan over low heat. Add a little oil if necessary, then pour small amounts of batter. Cook for 2-3 minutes, until bubbles start popping on the surface.
- Cook the other side: Flip and cook for about one more minute until golden brown.
- Serve & Enjoy! Stack them up and serve with honey, fresh fruits, or yogurt for extra yumminess!
